OATMEAL CAKE 
CAKE:

1 c. oatmeal
1 1/4 c. boiling water
1/2 c. shortening
1 c. brown sugar, packed
1 c. white sugar
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt

ICING:

6 tbsp. butter
3/4 c. brown sugar, packed
1/4 c. canned milk
1 c. coconut
1 c. pecans, chopped
1 tsp. vanilla

Cake: Pour boiling water over oatmeal; let stand 20 minutes. In large mixing bowl, cream shortening and sugars together. Add eggs; mix well. Add flour, soda, cinnamon and salt; mix well. Add oatmeal mixture and mix again. Bake at 350 degrees for 30 minutes.

Icing: Mix all icing ingredients well. Spread mixture on cooled cake and put it under broiler until browned on top. (Freezes well.)
