HOLIDAY PUMPKIN BREAD 
4 eggs
3 c. sugar
1 c. oil
3 1/3 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
1 tbsp. vanilla
2/3 c. water
2 c. pumpkin
1 c. raisins (optional)
1 c. nuts (optional)

Mix all ingredients together at one time. Grease and flour 2 (5 x 9) inch loaf pans. Divide batter equally into pans. Bake in preheated oven at 350 degrees for 1 hour. bread is ready when a toothpick inserted in the center of the bread comes out clean. Let cool 10 minutes. This serves 16 (1/2 inch) slices.

For a festive look, grease and flour 3 (1 pound) coffee cans and fill 2/3 full. Bake 1 hour at same temperature. This serves about 12 (1/2 inch slices.
