CHOP SUEY 
1/4 c. vegetable or peanut oil
1 tsp. salt
1/4 tsp. pepper
2 c. sliced Chinese cabbage
3 c. thinly sliced celery
1 can bean sprouts
1 can water chestnuts, sliced
Mushrooms, sliced (optional)
2 tsp. sugar
2 c. chicken broth
2 1/2 tbsp. corn starch
1/4 c. water
1/4 c. soy sauce
2 c. sliced cooked chicken, pork or veal, thin slivers (may mix all 3 meats
together)
Chow mein noodles

Heat oil, salt and pepper in deep skillet. Add vegetables and sugar and fresh mushrooms. Stir in chicken broth. Cook about 10 minutes.

Mix cornstarch, water and soy sauce. Add to vegetable mixture. Stir until thickens. Add meat and heat through. Serve over rice with chow mein noodles on the side.
