CHICKEN JAMBALAYA 
2 chicken breasts
1 lg. onion, chopped
2 tbsp. corn oil
1 c. uncooked rice
2 c. water
1/4 c. parsley, minced
1/4 c. green onion, chopped
1 clove garlic, minced
1/2 tsp. bottled browning sauce
Salt
Pepper

Remove skin and fat from chicken breasts then cut into 1/2 inch pieces. Saute in oil until lightly browned. Remove chicken from oil. Stir in onion, saute until brown, keep stirring. Add water to dissolved onion so you can have a beautiful brown sauce. Stir in rice, fry about 5 minutes, add chicken, water, parsley, onion, garlic, browning sauce, salt and pepper. Cover. Simmer about 45 minutes or until rice is tender. Serves 4.
