SHRIMP AND CRAB CREOLE 
1/2 c. prepared roux
1 med. onion, chopped
1 med. bell pepper, chopped
1 clove garlic, chopped
1 can tomato sauce
1 can tomato and green chilies
3 lbs. clean, seasoned shrimp
1 lb. crab meat
12 crabs (cleaned)
2 c. water
Salt
Pepper

Using large gumbo pot, saute onions and bell peppers in prepared roux until wilted. Add can of tomato sauce and cook a minute or two then add can of tomatoes and green chilies. Cook down until whole tomatoes begin to break up, then add 2 cups of water. Cook 30 minutes over medium heat. Add a little water if needed. Put in shrimp, crab meat and 12 crabs and cook 20 minutes more over low heat. Salt and pepper to taste. Serve over rice. If you don't have crabs just put the shrimp in.
