ONION PIE 
1 c. Ritz cracker crumbs
1/2 stick (1/4 c.) butter, melted
2 c. thinly sliced onion (Vidalias are best)
2 tbsp. butter
2 eggs
3/4 c. milk
3/4 tsp. salt
Dash pepper
Paprika
Dried parsley
1/2 c. grated sharp Cheddar cheese

Mix cracker crumbs and butter, press in pie plate.

Saute onions in 2 tablespoons butter until clear but not brown. Spoon into crust.

Beat eggs, milk, salt, pepper and pour over onions. Sprinkle with cheese, paprika and dried parsley. Bake 350 degrees, 30 minutes.
