TWICE BAKED POTATOES | |
4 med. potatoes, baked 1 c. low fat cottage cheese 1/2 c. skim milk 1 tbsp. minced onion Cut hot potatoes in half, scoop out potato meat leaving shells. Beat potato meat with cottage cheese, milk and onion. Spoon mixture back into shells. Sprinkle with paprika, parsley flakes and black pepper. Bake 10 minutes or until golden. 8 servings, 90 calories each. |
