DIET CRANBERRY COOKIES | |
3/4 c. sugar 1/2 c. butter 1 tsp. coconut flavoring 3 tbsp. skim milk 1 1/2 c. sifted flour 1/2 tsp. baking powder 1/2 tsp. salt 3/4 c. chopped cranberries, drained 1/2 c. coconut Cream first 3 ingredients until fluffy. Add milk, mix well, sift flour, baking powder and salt. Add to sugar mixture. Fold berries into batter. Divide dough in half. Roll each half into a 1 1/2 inch log. Roll each log in coconut. Wrap logs in wax paper and chill 8 hours. Slice. Place on ungreased cookie sheet. Bake at 375 degrees for 12 to 15 minutes. Makes 60 cookies at 40 calories each. |
