Several panfish fillets
Pancake batter
Beer or Ginger Ale
Shortening or cooking oil
Salt and pepper

Mix pancake batter according to directions, substituting beer or Ginger Ale for milk. Roll fillets in pancake mix and place in hot cooking oil. Brown well on both sides. Add salt and pepper to taste.
