PORK CHOPS IN SAVORY SAUCE 
2 pork loin chops
1 1/2 tsp. vegetable oil
1/2 c. sliced onion
1/2 c. sliced mushrooms
1/4 c. water
1 tbsp. each catsup, soy sauce, orange marmalade
1/2 tsp. sesame oil
1/8 tsp. dry mustard

Heat oil, add onions and mushrooms, add remaining ingredients, bring to a boil. Reduce heat, add pork chops, cover and simmer until tender. Reduce sauce and spoon over chops.

For pork loin - marinade at least 1 hour and bake at 400 degrees for 45 minutes per pound. Bake in sauce minus onions and mushrooms. Stir them in at last and pass with meat. (I marinate chops, bake 1 hour at 350 degrees, remove chops and add the onion and mushroom and thicken a bit - excellent sauce and (or) gravy.)

This recipe sounds great... but with sauce ingredients being so minimal... have no idea... how you could simmer chops until tender... then says to "reduce sauce" and spoon over chops. Am going to attempt this - perhaps in Crock-Pot and by doubling the sauce. Has all the right ingredients.
