ENCHILADA CASSEROLE 
1 1/2 to 2 lbs. ground beef
1 pkg. frozen tortillas
1 (15 oz.) can refried beans
1 med. onion, chopped
1 can enchilada sauce
2 cans cream of mushroom soup
Sharp Cheddar cheese, enough for 3 layers or use 16 oz. pkg.

Brown beef, onion, salt and pepper to taste. Add beans and soup and mix well. Add enchilada sauce and soup and simmer for 5 minutes. Layer, starting with tortillas, meat sauce, soup, cheese and repeat, ending with cheese. Bake at 400 degrees for 20 to 30 minutes.
