SALMON TERIYAKI 
6 slices fresh salmon
1/2 c. soy sauce
1/4 c. mirin (sweet rice cooking wine) or saki or sherry
2 tbsp. sugar
1 tsp. salt
2 tsp. lemon juice or vinegar

Mix the soy sauce, mirin, sugar, salt and lemon juice. Marinade salmon steaks in sauce for 20 minutes. Broil, brushing with marinade 2-3 times during cooking.

A nice variation I make looses the lemon juice/vinegar and soy sauce. Reduce the Mirin wine to 2 tbsp. Add 1/3 c. teriyaki sauce, 2 tbsp. Hoisin Sauce, 2 tbsp. fresh grated ginger, 2 tbsp. chopped garlic, 1 tsp. olive oil. Same cooking directions except instead of broil, bake in covered container at 350°F, for 35-45 minutes. Make sure you leave the descaled skin intact. Best tasting part. Reserve cooked sauce and pour over white rice when serving.
