GRANOLA BREAD
6 1/4 to 6 3/4 c. flour, preferably unbleached
2 pkg. yeast, dry
1 tbsp. salt (I usually use 1/2 tbsp.)
1 1/4 c. water
1 c. milk
1/2 c. honey
1/4 c. shortening
2 c. Granola, crushed
2 eggs

In a large bowl, combine 3 cups flour, yeast, salt, and mix well. In saucepan, heat water, milk, honey, and shortening until warm (shortening doesn't have to melt). Add liquid mixture to flour mixture. Add eggs. Blend at low mixer speed until moistened then beat at medium speed for 3 minutes. dump in granola and enough flour to form a firm dough. Knead on floured surface until smooth and elastic, 8-10 minutes. Place in greased bowl, cover and let rise until doubled, 1 1/2 hours.

Punch down dough. Divide in half. Divide each half into 3 parts. Roll each to make a 14 inch rope. Braid ropes and pinch ends. Tuck ends under and place in 9 x 5 inch greased pans. Cover and let rise about 1 hour until doubled. Bake at 350 degrees for 30 minutes or until loaves sound hollow. Cover with foil the last 10 minutes of baking. Remove and cool.
