SWISS STYLE POTATO SOUP 
4-6 small potatoes
1 tbsp. butter
4 fresh green onions, sliced
2 sprigs parsley
1 c. Swiss cheese, cubed
1 (13 oz.) can evaporated milk
1/4 tsp. salt

Boil potatoes until tender. Drain, reserving 1/2 cup water. Peel and cube. Saute onions in butter. Combine potatoes, onions, parsley, cheese, milk, water, and salt. Simmer for 30 minutes.

Serve.

Makes 4 servings.
