SMOKY MOUNTAIN CORNBREAD 
1 1/2 cups buttermilk
2 eggs
1 tbsp. sugar
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 cups stone-ground cornmeal (or any white cornmeal)
1/2 cup all-purpose flour
1/4 cup (1/2 stick) butter, melted

Preheat oven to 425°F.

Beat the first 5 ingredients. Stir in cornmeal and flour. Add melted butter. Mix. Pour batter into a greased 8-inch square pan.

Bake at 425°F for 30 minutes or until golden brown.

Variation: You may use a muffin pan. Makes about 8 muffins.
