TABOUILI (TABOOLEH) SALAD | |
3/4 c. bulgur wheat 1 lg. ripe tomato, finely chopped 1 c. scallion tops, finely chopped 1/2 lg. cucumber, unpeeled, seeded, finely chopped 1/4 c. fresh lemon juice 2 tsp. coarse salt & pepper 1/3 c. olive oil 2 tbsp. finely chopped fresh mint leaves Cover wheat with water to soak for 1 hour. Drain in colander then squeeze dry with towel. Place with other ingredients. Toss and chill. Remove from refrigerator 30 minutes before serving. |
