HARSCHORN SCHALTZ COOKIES | |
2 tbsp. crushed ammonium carbonate (obtained from pharmacist, cooking type) 1 lb. butter or Crisco 1 lb. sugar (2 1/4 c.) 1 tsp. salt if Crisco used 1 lemon rind, grated (I use 2 rinds) 2 tsp. crushed cardamom seed or 3 of powder 1 c. chopped, toasted almonds 5 c. flour, approx. Heat butter to boiling, remove from heat and stir in ammonia until dissolved. When somewhat cool add sugar, salt, almonds, lemon rind and cardamom seed. Add flour to make a stiff dough (enough to stick together into balls). Roll in balls and press flat. Bake in 325 degree oven for about 10 minutes or until very lightly turned (off- white). (6 generation favorite) Avoid standing over the ammonia and butter. |
