SALMON WITH ORANGE BUTTER 
1/2 c. fresh orange juice
1/2 c. white wine
12 tbsp. unsalted butter
1 tsp. orange zest
Salt to taste
2 tbsp. heavy cream
1 1/2 lbs. salmon, sliced thin
Salt, fresh ground pepper

In small saucepan, bring orange juice and wine to boil and reduce by half. Remove from heat and whisk in butter gradually until creamy. Stir in cream, zest, salt to taste. Place salmon in buttered baking dish and bake in preheated 400 degree oven for 2 to 3 minutes. Top with orange butter, salt and pepper.
