BLACKBERRY MUFFINS 
1/2 c. milk
1/4 c. salad oil
1 egg, beaten
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. fresh blackberries

Stir milk and salad oil into egg. Sift together and add dry ingredients. Stir just until flour is moistened. Fold in berries. Batter should be lumpy. Fill greased muffin cups 2/3 full.

Bake 20 to 25 minutes at 400 degrees.

I used made mini muffins and they only took 10 minutes and I mixed everything at once and they came out very colorful, tastes good too!
