TEXAS CAVIAR 
2 cans black-eyed peas, drained and washed
red onion, sliced in rings
3 garlic cloves, chopped
2/3 c. olive oil
1/3 c. white vinegar
salt and pepper

Drain and wash peas; add onions and garlic. Stir and add oil, vinegar, salt and pepper. Marinate overnight.
