HONG KONG PORK CHOPS 
8 loin pork chops
Salt to taste
2 to 3 tbsp. salad oil
1 med. onion, thinly sliced
1/4 c. soy sauce
2 tbsp. lemon juice
1/2 tsp. ground ginger
1/4 tsp. garlic
1/2 lg. green pepper, cut into rings
1/4 c. sliced water chestnuts
1 lemon, thinly sliced
1/4 c. orange juice
1 (4 oz.) can sliced mushrooms

Season chops with salt and brown on both sides in oil. Place in 2 quart casserole. Cover with onion slices. Combine soy sauce, orange juice, lemon juice, mushrooms, ginger, and garlic; mix well. Pour over chops. Cover and bake at 350 degrees for 35 minutes. Cooking time may vary due to thickness of chops.
