BANANA CAKE 
Cake:

2 medium very ripe bananas, mashed
1 c. flour
3/4 c. chopped walnuts
2/3 c. sugar
1 c. cornstarch
1 egg, slightly beaten
1 tbsp. orange juice
1 tsp. baking soda
1 tsp. vanilla
1 tsp. salt

Preheat oven to 350°F. Mix dry ingredients. Stir in remaining ingredients. Pour into greased and floured 8 x 8 inch baking pan.

Bake for 30 minutes or until toothpick comes out clean when poked into cakes center. Set aside to cool before icing.

Frosting:

1/3 c. soft butter
1 1/2 c. powdered sugar
1 tbsp. orange juice
1 tbsp. grated orange peel.

Combine ingredients, mix until fluffy, and spread on cake.
