SMOKED CHICKEN OR TURKEY | |
1 c. Morton's Tender Quick 5 tsp. liquid smoke 1/4 c. salt Mix together with 1 gallon water. Pour over chicken or turkey in large plastic or glass container and set in cool place 4-7 days (depending on size). Take out of brine and wash well. Put in roaster and bake 1 1/2 hours at 350 degrees, then reduce to 300 degrees and bake 4 - 4 1/2 hours (I keep my chicken in basement refrigerator). |
