EGG NOODLES 
2 c. sifted flour
1 tsp. salt
3 med. eggs
3 tbsp. water

Sift together flour and salt. Combine eggs and water, beat well. Add flour mixture to make very stiff dough. Knead on lightly floured board about 1 minute or until elastic. Let rest 10 minutes, roll out as thin as possible. Let stand about 1 hour or until partially dry, turning once. Roll up dough and slice 1/8 to 1/2 inch strips. Toss noodles lightly to separate strips and allow to dry. Yields about 5 cups.
