HAWAIIAN CHICKEN CASSEROLE 
2 c. diced cooked chicken
2 c. cooked brown rice
1 sm. can juice-packed pineapple tidbits, undrained
1 med. green pepper, chopped
1/2 c. Miracle Whip light
1 tsp. ginger
1/4 c. raisins
1 sm. can sliced water chestnuts, drained
1/2 c. shredded Cheddar cheese

Combine all ingredients, but the cheese, and pour into a large casserole. Sprinkle cheese on top and bake at 375 degrees for about 20-25 minutes, covered, until bubbly. Serves 4-6.
