CURRIED CHICKEN 
1 stewing chicken (3-4 lb.)
1 box long grain & wild rice
2 c. mushrooms
1 can cream of chicken soup
1 c. mayonnaise
1/4-1/2 tsp. curry powder
1 pkg. Pepperidge Farm stuffing mix

Cook chicken and cut into bite-size pieces. Cook rice according to package and spread on the bottom of a 9 x 13 x 2 inch casserole. Spread chicken pieces over rice. Slice mushrooms and fry butter 5 minutes. Put in bowl and add chicken soup (undiluted). Add curry powder and mayonnaise; mix. Pour over chicken. Top with stuffing mix. Bake at 350 degrees for 25 minutes.
