TANGY LEMON BARS 
1 c. flour
1/4 c. confectioners' sugar
1/2 c. butter, cut in pieces
3/4 c. sugar
2 eggs, beaten lightly
1 1/2 tbsp. lemon juice
1 tbsp. grated lemon peel

Preheat oven to 350 degrees. Line 9 inch square pan with foil, extended 2 inches over 2 sides. In a bowl, combine flour, and confectioners' sugar; then cut in butter until it resembles crumbs. Press into pan. Bake until barely browned, about 20 minutes. Meanwhile, in medium bowl, beat sugar, baking powder, salt, eggs, lemon juice, and peel. Pour over crust and bake another 20 minutes until set. Remove pan to wire rack; cool completely for 2 hours. Lift from pan by foil and place on cutting board. Cut into squares and sprinkle with confectioners' sugar.
