TACO CASSEROLE 
1 1/2 lbs. ground beef
1 med. onion (chopped)
1/2 c. chopped ripe olives
1/2 c. chopped mushrooms
1 c. shredded lettuce
2 med. tomatoes (diced)
1 pkg. taco seasoning
1 (6 oz.) can tomato paste
1 pkg. Frito Corn Chips (king size)
1 c. shredded Cheddar cheese

Coat casserole dish with butter; layer bottom and sides of dish with corn chips. Brown beef and drain fat; mix into taco seasoning, tomato paste and 1/2 cup water. Simmer for five minutes.

Alternate layers of the ingredients in the casserole dish in this order; beef mixture, olives, onions, mushrooms and cheese. Bake at 300 degrees for 15 minutes; remove from oven and top with lettuce and tomatoes before serving.
