PUMPKIN LOG 
3 eggs
2/3 c. canned pumpkin
2/3 c. sugar
3/4 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon

Mix together. Line a jelly roll pan (or cookie sheet) with greased wax paper. Pour batter onto wax paper and spread evenly. Bake for 10-12 minutes at 350 degrees.

Meanwhile, sprinkle powdered sugar on a cotton towel (or paper towel). Remove cake from oven and flip on to the sugared towel. Gently peel off the wax paper and sprinkle top of cake with powdered sugar. Roll with the towel and let cool.

FILLING:

8 oz. cream cheese
1 c. powdered sugar
1 tsp. vanilla
2 tbsp. butter (optional)

Beat well. Unroll cooled cake and spread with filling. Roll and refrigerate.
