SWEET POTATO SOUFFLE CASSEROLE | |
2 c. mashed sweet potatoes 1 1/4 c. granulated sugar 2 eggs, beaten 3/4 stick butter, melted 1 c. milk (1/2 c. milk if canned potatoes are used) 1/2 tsp. nutmeg 1/2 tsp. cinnamon Mix all ingredients well and pour into a greased casserole dish. Bake at 400 degrees for 20 minutes. While this is baking, make topping. TOPPING: 3/4 c. crushed corn flakes 1/2 c. pecans 1/2 c. brown sugar 3/4 stick butter, melted Mix ingredients and spread evenly over baked casserole and return to oven for additional 10 minutes still at 400 degrees. |
