EGGPLANT PARMESAN 
1 med. eggplant
1-2 eggs, beaten
Seasoned bread crumbs
Oil for frying
Tomato sauce
Mozzarella cheese, shredded

Slice eggplant into very thin slices. Soak up excess water with paper towels. Dip into beaten egg and bread crumbs. Fry until cooked. Layer in a casserole dish with tomato sauce and Mozzarella cheese. Bake at 350 degrees for 20 minutes.
