MISS STEFANO'S "GREEK CHICKEN" 
fresh oregano.., dried
EVOO (extra virgin olive oil).. pref.. "eliki"
one whole chicken... without the feathers!... and chopped!
salt and pepper
one fresh lemon
one running faucet for water... and cooking sheet with al/foil
and one oven set at "broil"!
it helps to play some "ana veessy"... in the background!

BOIL your de-feathered friend in pieces... in a large pot... just enuf... so you get that "grey cloud" out of the water... Take your bird pieces... spread on your cooking sheet, and slather with oil... and your oregano...

PLACE under the broiler... LEAVE THE DOOR OPEN... (the oven that is)... this fools the therm and the coils wont shut off!... watch your bird for 20 minutes... it wont say much... but will turn a golden brown... and smell lovely!...

NEXT... PULL the tray out and flip the pieces... let sizzzzzle for a bit... (5 minutes)..... flip back over and use some of the juices to give the bird a bath!... add some salt and pepper...

NOW... SQUEEZE the lemon... after you have cut in in half... over this bird.... take out and let heal!..... lol.... SQUEEZE some more lemon over it and ENJOY!!!!

SERVE with some steamed Dandelion greens with lemon... or some great Orzo rice!!!! ELLA!... Ya SU!
