SPARKLING BEET SALAD | |
3 oz. pkg. lemon flavored gelatin dissolved in 1 c. boiling water 1 (1 lb.) can beets, pureed in blender or processor 1/2 c. pureed celery 3/4 c. liquid from beets 2 tbsp. vinegar 1/2 tsp. Worcestershire sauce 1/2 tsp. prepared horseradish 1 tsp. pureed onions 1/2 tsp. salt Add all ingredients except beets and celery to dissolved gelatin. Taste to adjust seasonings. Chill until partially set. Fold in beets and celery. Will make 6 individual molds. Chill until firm. (Celery may be finely diced and floated on top.) |
