ZUCCHINI JELLY 
5 c. grated zucchini
1/2 c. lemon juice

Boil in covered pan 10 minutes, stirring occasionally.

Add:

5 c. sugar
6 oz. pkg. your favorite flavor of Jello

Boil 10 minutes more, put in glass jars!

My kids loved it, not sure if it has any real nutritional value to it but it gets eaten and it uses up the zucchini! The recipe I found recommended using red jello, but I think lemon or peach would have been nice too (kids shy from lime jello). WARNING: this stuff is super sweet, it will make your teeth hurt if you have any hidden cavities!
