CHICKEN BROCKETTES "FOR THE
GRILLE"
 
Chicken breasts, skinless, 1 oz. cubes

MARINADE:

1/4 c. peanut oil
3 tbsp. lemon juice
2 tbsp. garlic, minced
Oregano flakes, to taste
Black pepper, crushed, to taste
Kosher salt "coarse", to taste

Combine chicken with marinade. Cover and marinade overnight in refrigerator. To assemble: Vegetables: Yellow & red peppers, 1 inch dice Fresh mushrooms, whole medium Artichoke bottoms, 1 inch cubes

Arrange on scewers alternating vegetables with chicken. Grill on barbecue. Serve with fresh pasta or rice.
