QUICK ENCHILADAS 
1 lb. ground beef
2 cans enchilada sauce
12 corn or flour tortillas
1 pkg. taco spice mix
1/2 lb. grated Cheddar cheese

Brown ground beef and drain. Add spice packet and water as directed on packet. Cook 10 to 15 minutes. Pour enchilada sauce into a bowl. Dip each tortilla into the sauce, place meat in center of tortilla and roll up. Place tortillas seam side down in casserole dish, 9 x 13 inches. Pour remaining sauce over tortillas and sprinkle grated cheese over all. Bake at 350 degrees about 30 minutes. Serves 4 to 5.
