GRATED SWEET POTATO PUDDING 
4 c. grated sweet potatoes
1 c. milk
3 eggs
1 tsp. allspice
1 c. milk
1/2 c. butter
1 tsp. ground cinnamon
1/2 tsp. ground cloves

Melt butter in a heavy, oven-proof skillet. Mix all ingredients together. Pour mixture into the hot pan of butter. Stir until heated. Put skillet in 350 degree oven and bake. When crusted around edge and top. Turn under and let crust form again. Do this twice, allowing a crust to remain on top and sides. Total cooking time is about 40 minutes. Serve with sweetened cream or ice cream.
