QUICK & CLASSY SHRIMP 
1 can (10 oz.) condensed cream of shrimp soup
2 tbsp. sharp cheddar pasteurized process cheese spread or sharp grated cheddar cheese
2 tbsp. butter
1 tbsp. prepared mustard
1 tsp. grated fresh lemon rind
1 (10 oz.) frozen peas
1/2 lb. cooked shrimp, fresh or frozen
Cooked rice

In a 2 quart casserole combine soup, cheese spread, butter, mustard and freshly grated lemon rind. Stir well. Add frozen peas. Cover and cook in microwave on high for 6 minutes, stirring after 3 minutes. Add shrimp, continue cooking on high, uncovered for 6 minutes, stirring after 3 minutes. Serve over rice. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
