FRUITED CHICKEN SALAD 
4 c. diced, cooked chicken
2 lg. apples, unpeeled and chopped
2 lg. oranges, peeled, seeded and sectioned
1 c. coarsely chopped walnuts
2/3 c. mayonnaise
1/2 c. orange juice
1 tsp. salt

Combine first 4 ingredients, set aside. Combine mayonnaise, orange juice and salt; mix until smooth. Add mayonnaise mixture to chicken mixture; toss gently. Chill at least 2 hours. Serve on lettuce leaves.
