RICE PIZZA 
3 c. cooked rice
2 eggs, beaten
1 c. Mozzarella cheese, shredded
1/4 c. onion, chopped
1 tsp. salt
Toppings for pizza

Preheat oven to 450 degrees. Combine rice, eggs, cheese, onion and salt. Press mixture evenly onto the bottom of a pizza pan, using the back of a spoon. Bake for 20 minutes. Remove from oven. Spoon on your favorite pizza sauce (jar or homemade). Sprinkle cheese and additional toppings as desired. Return pan to oven and bake an additional 10 minutes. Cut into wedges to serve.
