SUGAR FREE DATE COFFEE CAKE 
1/3 c. mashed ripe bananas
1/2 c. butter, softened
3 lg. eggs or 3 whites & 1 yolk
1 tsp. vanilla extract
1 1/4 c. water
3 c. white flour
1 tsp. baking soda
2 tsp. baking powder
1 1/2 c. chopped dates

TOPPING:

1/3 c. chopped dates
1/3 c. chopped walnuts
1/3 c. flaked coconut

Beat together banana and butter until creamy. Add eggs, vanilla and water; beat well. Measure in flour, soda and powder; beat well. Stir in 1 1/2 cups chopped dates. Spoon batter into an oiled and floured 9 x 13 inch baking pan; spread batter evenly in pan.

Combine topping ingredients and sprinkle over batter. Bake in 350 degree oven for 20 to 25 minutes (oven preheated) or until toothpick inserted in center of cake comes out clean. Cool on wire rack before cutting cake. Serves 8 to 10 people.
