FEATHERY ONION RINGS 
6-8 lg. (mild sweet) onions

Slice and cover with boiling water; drain immediately. Place in shallow dish and cover with 1 1/2 cups milk. Soak for 1 hour.

BATTER:

1 c. flour
1/4 tsp. salt
3/4 c. water
2 tbsp. oil

Mix and fold in gently 1 beaten egg white. Dip onion rings in batter and fry a few at a time in hot oil.
