PUMPKIN BREAD 
1 c. canned pumpkin
2 eggs
1 tsp. vanilla
1 c. chopped walnuts or pecans
1/2 c. oil
1/3 c. water
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves or allspice
1/2 tsp. ground nutmeg or made
1 1/2 c. sugar
1 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt

In a 2 quart mixing bowl, combine pumpkin, eggs, vanilla, nuts, oil, water and spices. Stir in sugar. Combine flour, baking soda and salt in a separate bowl, then stir into pumpkin mixture. Blend until all ingredients are moistened. Turn batter into a well-greased glass loaf dish. Place dish on an inverted saucer in the oven. Set microwave oven at power level DEFROST for 24 minutes, rotating once, and then power level COOK for 7 1/2 minutes. Rotate 1/4 turn every 3 minutes. If necessary, microwave at power level COOK an additional 4 to 9 minutes to complete baking. Let loaf stand 10 minutes before removing from dish. Let stand an additional 5 minutes before serving. Makes 1 loaf.

Since microwave ovens vary in power, you may need to adjust your cooking time.
