SOUTHERN SWEET POTATO PIE 
3 lbs. sweet potatoes
1/4 c. butter
4 eggs (med. to large)
1 tsp. vanilla flavor
1 c. sugar, then add to taste
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
1/2 c. milk
1/4 c. orange juice
1/2 c. shredded coconut (optional)

Boil 3 pounds sweet potatoes until soft. Remove skin. Preheat oven to 375 degrees. In a mixing bowl beat the potatoes until fluffy. combine all the ingredients and add to the potato mixture. Pour into a 9 inch pie shell. Bake at 375 to 400 degrees for 40 minutes. Yield: two pies.
