VELVET CAKE 
2 1/2 c. flour (Velvet cake flour)
1 1/2 c. sugar
1 1/2 c. Wesson oil
1 c. buttermilk
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. vinegar
1/4 tsp. salt

Blend sugar, eggs and oil. Add sifted flour, baking soda and salt. Pour vinegar in buttermilk. Add 1/2 buttermilk mixture to batter (mix well). Then add rest to batter. Bake at 350 degrees for 25 to 30 minutes.

ICING:

1 (8 oz.) Philadelphia cream cheese, softened
1 box confectioners' sugar
1 stick butter, softened

Blend well, add small bag of chopped walnuts or pecans. Add 1 teaspoon vanilla.
