CHOCOLATE ZUCCHINI CAKE 
1 tsp. vanilla
1/2 c. oil
1 1/2 c. sugar
4 egg whites (I used 2 egg whites & 1 whole egg)
1/2 c. skim milk
1 tsp. baking soda
1 1/4 c. white flour
1 1/4 c. whole wheat flour
1/4 c. cocoa powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. lite salt
2 c. zucchini, grated

Preheat oven to 350 degrees. Combine vanilla, oil, sugar, egg white and skim milk. Sift together baking soda, flours, cocoa, cinnamon, nutmeg and lite salt. Add ingredients alternately with zucchini to first mixture. Bake for 60 to 65 minutes in a lightly oiled bundt pan or about 45 minutes in a 9 x 13 inch pan.
