CHICKEN NUGGETS 
1 lb. chicken, boneless chicken breasts, cut into 1 inch pieces
1 tbsp. vegetable oil
1/2 c. variety baking mix
1/2 c. corn flake crumbs
3/4 tsp. paprika
1/4 tsp. salt
1/4 tsp. pepper

Toss chicken and oil; mix remaining ingredients. Shake about 6 pieces of chicken at a time in a bag until coated. Shake off excess crumbs. Arrange in single layers in pie plate. Cover with waxed paper. Microwave on high 7 to 8 minutes, rotating plate 1/2 turn after 3 minutes or until pieces run clear. Serve with Apricot-Honey Sauce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
