ZUCCHINI CASSEROLE | |
4 c. sliced zucchini 1 c. sliced onions 1/4 c. butter/oleo 1/4 tsp. each salt, pepper, oregano, basil, garlic powder 2 eggs, beaten lightly 8 oz. Mozzarella cheese, grated 1 can crescent dinner rolls Saute about ten minutes zucchini, onions in butter/oleo. Mix the lightly beaten eggs into the vegetable mixture, stir as you pour as it sets up rapidly. Add grated Mozzarella cheese to above vegetable mixture and when well mixed pour into flat casserole that has been lined on the bottom with crescent rolls. Bake for 35-40 minutes at 350 degrees. |
