VINIE MAE'S BUTTERMILK BISCUITS | |
2 c. flour 1/4 c. sugar 1/4 c. oil 1 pkg. yeast, dissolved in 1/3 c. warm water 1 c. buttermilk 1 plus c. flour 1 stick butter Mix 2 cups flour with the sugar in a large bowl. Stir in oil. Pour in yeast dissolved in warm water. Mix well. Stir in buttermilk. Add enough flour, about 1 cup, to make a spongy dough. Let rise 15 minutes. Melt a stick of butter while waiting. Flour the table. Roll out the dough to about 1/4 - 1/2 inch thickness. Butter a cookie sheet with the melted butter. Cut out the rolls, using a large cup or glass. Splat the top of the rolls with melted butter. Fold over in half and set on cookie sheet. Splat tops of biscuits with remaining butter (approximately 25-30 biscuits). Let rise 1 1/2 hours before baking 25-30 minutes at 325 degrees. |
