FAVORITE MEATBALL HOTDISH | |
2 lbs. ground beef 2 eggs 1 c. cracker crumbs 1 sm. chopped onion Salt and pepper to taste 1-2 cans mixed vegetables, drained 1 can corn, drained 2 cans cream of mushroom soup 2-4 potatoes, peeled, sliced, parboiled (optional) Mix beef, eggs, onion, salt and pepper together and shape into large or small meatballs. Bake on a jelly roll pan with sides in a 325 degree oven until cooked through but still very moist. Drain juice from pan. Save the juice for making gravy another day. Spray a 2 quart casserole dish with Pam or lightly grease. Arrange meatballs on the bottom of casserole dish. Add 1 to 2 cans of mixed vegetables and 1 can corn. Top with 2 cans cream of mushroom soup. Stir slightly to mix and stir again halfway through the baking. Bake at 350 degrees for 30 to 40 minutes. |
